Servers start with crossplay on (-ServerPlatform=ALL), so PC players on Steam and Epic and console players all find them in the in-game unofficial list. Switch to PC only in Deployment Settings if your tribe is all on PC.
XP, taming, harvesting, difficulty, day length and PvE or PvP live in GameUserSettings.ini, which ARK rewrites when it shuts down. The Server Settings tab stops the server, writes your changes and starts it again, so an edit never comes undone.
